Dark bulgur for Kibbeh differs from the rest of the types in color and composition because it is made from red wheat. This type of bulgur is one of the dark types, and for this reason, it is softer than yellow bulgur. This difference is also noticeable in its taste. Due to its easy kneading, this type of bulgur is used in making Kibbeh.
